This dressing recipe was inspired by my love of citrus, cilantro and salad (along with my obsession with my Blendtec Blender).
While I used my Blendtec, any high speed blender will work, and even if you don’t have one, you can juice the citrus and whisk this dressing up…it will be just as yummy with the added satisfaction of some elbow grease!
- ¼ cup extra virgin olive oil
- ⅛ cup orange juice
- 1 orange
- 2 lemons
- 1 lime
- 1 handful fresh cilantro
- 2-3 tsp. pure maple syrup
- Salt & Pepper to taste
- Put all ingredients into a high speed blender and blend until smooth. If you do not have a blender, juice the citrus first and whisk all ingredients by hand.
TIP: Here is a quick and easy way to cut your oranges. Slice off both ends and cut vertically down one side of the orange. Pull the peel apart and all the slices will spread out – simply pluck them out!
Put all ingredients into your blender. Set to “dressing” or use varying low and high speeds until everything is blended nicely. Taste and add more salt or pepper to taste. Place into a jar or container with a tight lid and keep in the fridge for up to a week.
I use this dressing on one of my favorite salad…. Mixed greens, chopped dates or apricots, chopped almonds, caramelized onions and quinoa.
